Arroz con garbanzos y espinacas

INGREDIENTES: para 4 personas
300 gr de arroz
100 gr de garbanzos envasados
150 gr de espinacas en hoja
1 diente de ajo
1 cebolleta
1 dedal de aceite de oliva
Pimienta blanca
1 cubito de caldo de pescado
9 dedales de agua

Ponga en un recipiente, a fuego medio, el agua, un poco de sal y el cubito de caldo; luego cocine en ella el arroz durante 18 minutos.

Pele y pique finamente el ajo y la cebolleta. Lave muy bien las espinacas y elimine los tallos gruesos. Vierta el aceite de oliva en una sartén y salteé en ella durante 2 minutos a fuego suave, el ajo y la cebolleta. Añada las espinacas y saltéelas 1 minuto hasta que se reduzcan de tamaño.

Agregue los garbanzos y mezcle el preparado. Salpimiente.

Vierta el arroz sobre la preparación y remueva todo cuidadosamente, para que las espinacas no se rompan. Sirva.
