INGREDIENTES: 6 porciones
125 gr de queso campesino
260 gr de coco
375 gr de yuca
100 gr de azúcar
1 gr de anís
60 gr de leche
40 gr de mantequilla
60 gr de helado de vainilla
200 gr de panela
40 cms cúbicos de agua
2 gr de jengibre
PREPARACIÓN:
Ralle el queso, el coco fresco y la yuca. Mezcle con la leche, el anís y la mantequilla. Amase y deje reposar por una hora. Engrase un molde, adicione la mezcla y lleve al horno a 160°C por una hora.
Aparte, corte la panela en trozos pequeños y en una olla a fuego suave deje que se disuelva. Añada el jengibre en un solo trozo e infusione. Retire a los 5 minutos. Lleve la mezcla hasta consistencia de almíbar. Sirva el enyucado con helado y almíbar de panela.
